Bones & Smoke is a small smokehouse in Bondi Junction built around one thing: serious smoked meat. No shortcuts, no gimmicks, and no seed oil used – ever.

What started as a local favourite on the Central Coast has become on of the Best BBQ meat in Bondi experiences, driven by one chef, one smoker, and one signature way of doing things.

The Signature Smoking Method

Bones & Smoke isn’t just another grill spot. Chef Vinnie uses a signature smoking method built from trial, error, and a lot of long nights by the pit.

  • Real wood smoke: for deep flavour and proper bark.
  • Dialled-in timing: a process that cooks faster than traditional low-and-slow, but still delivers the melt-in-your-mouth meat experience.
  • Custom rubs and fats: spice blends and fats designed to suit each cut.

No Seed Oil - Our Non-Negotiable

One of the things that sets Bones & Smoke Bondi Junction apart is what we don’t use.

  • No Seed Oil Used in cooking – no canola, sunflower or “vegetable” oil blends.
  • We cook with butter, ghee, and beef tallow instead.
  • This applies across the board – smoked meats, sides, and even dessert.

Guests notice the difference straight away – from wild boar fried in butter and ghee to coleslaw dressed with beef tallow aioli. It’s a cleaner, richer way to eat BBQ, and it’s core to who we are.
