We recommend at least 48 hours in advance for smoked meat platters and trays, especially for weekends and public holidays. For larger catering orders or big groups, aim for 5-7 days’ notice so we can plan the smoke, secure the best cuts, and make sure nothing sells out before your event.
For most online platters and trays, you can order from a single tray upwards – perfect for small gatherings or family dinners. For catering-style orders (multiple trays/feeds for larger groups, packeges, etc) we set at least a 10 or 15 minimum order per person depending on the package.
All orders can be picked up from our venue at 82 Bronte Rd, Bondi Junction.
Delivery for platter catering orders within Sydney may be available on request, depending on date, time, and order size. Get in touch with your event details and we’ll confirm if we can deliver or recommend the best pickup window.
Our smoked meats and sides are best eaten on the day, but leftovers must be kept well and handled properly. Reheating and storage instructions are provided.
Always cool food quickly, refridgerate promptly, and reheat until it’s piping hot all the way through before serving.
Yes. We can provide reheating instructions for every platter or tray of brisket, ribs, pulled pork, beef cheeks, and sides so you can bring the BBQ back to life at home without drying it out.

In many cases, yes. A lot of our smoked meats are naturally gluten-free, but rubs, sauces, and sides can contain gluten or dairy, so we ask you to tell us your dietary needs when ordering. We often can:
Yes, Our whole philosophy is built around real smoke and real fats. We use butter, ghee, beef tallow, and quality animal fats, and no seed oil used in cooking – this includes mains, sides, and dessert. If you have any questions about ingredients or cooking fats in a particular dish, just ask and we’ll happily break it down.
For small platter orders, changes or cancellations are usually possible up to 48 hours before pickup or delivery, as long as we haven’t started prepping or smoking your meats.
For large catering orders, we typically require more notice (often 5-7 days) because the meat is order, trimmed and smoked specificallly for your event. Late cancellations may incur a partial or full charge to cover product and prep already done.
You can adjust the exact timeframes and we’ll reqrite the wording if you want it super tight and legal-sounding.
